Very nice meal, Mike. My wife and I use a lot of beetroot, also. .... nature’s laxative with colour added. LOL

We also eat the leaves, very much like spinach. Goooood stuff.

How did you cook your salmon fillets? Atlantic salmon is one of my favourite fish.

WE MOSTLY USE FROZEN FILLETS BUT ONCE DEFROSTED I COOK THEM AS FRESH SALMON.
I PUT THE FILLETS IN A DISH WITH A 1/4 INCH OF WATER IN THE BOTTOM AND I SPRINKLE LEMON JUICE OVER THE FILLETS , COVER WITH COOKING FILM (CLINGFILM) AND COOK IN THE MICRO WAVE FOR TWO MINUTES ON HIGH OR UNTIL THE COLOUR CHANGES TO PINK FROM REDDISH PINK. IF IT IS NOT QUITE COOKED LEAVE IT COVERED AS IT WILL COOK RESIDUALLY. MICROWAVES VARY OF COURSE YOU WILL NEED TO ADJUST ACCORDINGLY.SERVE WITH TARTARE SAUCE OR MAYONAISE
