I grew a fennel plant this year. Well, I grew several but I have one that actually looks like something. So now what do I do with it? The intent was just to help my apple tree become the best it can be.

Here are some pieces of information that I’ve found:
  • mulch the plant for the winter and it will come up again in the spring
  • harvest the root when it is between 2 and 5 inches in diameter
  • cut it off at the ground level and the roots will send up new shoots (but not new bulbs for growing more plants)
    (I don’t know which kind I have – yet – I have to look up my information)
  • you can eat the fronds, seeds, or the root
  • the fennel herb doesn’t grow the bulb – just roots as opposed to “florence fennel” which produces the bulbs
  • fennel seeds can be used as an after-dinner mint . huh! who knew?
  • there’s a whole list of plants that you DON’T put fennel near (companion planting)
  • attractive to beneficial insects
  • host plant for swallow butterfly caterpillars. (big green critters)
  • “The best time to plant Florence fennel is either in early spring or in late June-July so that the plants can mature in cooler fall weather.   • “Keep the crop weed free and well watered. Mulch to conserve soil moisture. Once the stems start to swell, earth them up about halfway for a whiter, sweeter crop (you can add paper collars to keep the soil out, as with trench celery).” *

Well good luck determining what you have.

Indian restaurants usually have Fennel seed in a little dish at the cashier stand with a small spoon so you can take a pinch on your exit from the restaurant. Usually with smaqll pieces of candy.

I believe fennel is good for the digestion and it helps take away the strong after taste/aroma of garlic. There are quite a few recipies for fennel. You can saute’, stew, roast, grill it just like other root/bulbed veggies like potatoes, onions or carrots. next year—I’ll use it next year, although I can still put the leaves into salads I guess.

And I have the florence fennel. I actually found the receipt from my purchases at the time—can you believe it? Me, neither. So I have the bulb variety. Yippee.

Thanks to you Debbie I now know a little about fennel. The roots are sold in the grocery stores here, but we haven’t used them. It was interesting to hear about it as an antidote to garlic breath. For those who aren’t aware it, chewing on a fresh piece of parsley after dinner is also very effective against garlic. It works like a small miracle!

Debbie, I use fennel all the time in cooking. Here is a simple but delicious recipe I love.

Baked Fennel with Parmesan

Ingredients

  • 2 fennel bulbs
  • 1 tablespoon butter
  • 3/4 cup half-and-half cream
  • 3/4 cup creme fraiche(or light sour cream)
  • 1/4 cup grated Parmesan cheese

Directions
Yes it is slightly fattening, but if you only eat it only once and a while consider it a reward for growing a real prize.

1. Preheat the oven to 400 degrees F (200 degrees C). Cut the base off of the fennel bulbs, and cut a cone shape into the base to remove the core. You can see the core because it is whiter than the surrounding green. This helps the fennel cook faster. Slice the fennel vertically (upright) into 1/4 inch thick slices.
2. Melt the butter in a large skillet over medium heat. Add the fennel, and fry for about 5 minutes. Stir in the half-and-half and creme fraiche until well blended. Transfer to a shallow baking dish. Sprinkle Parmesan cheese over the top.
3. Bake for 30 minutes in the preheated oven, or until the top is golden brown and the fennel is tender enough to pierce with a fork.

I also love it in a salad, Fennel, cucumbers, shredded carrot, and cherry tomatoes. Toss with a Dijon and Garlic Vinaigrette Dressing. Also, roast loin of pork on abed of fresh from the garden Knob Onions and Fennel. Knob Onions are those green onions you let go a little to far that form a bulb on the end but have not yet gone to flower.

Thanks for the information about fennel. I have two plants this year (trying something new) and I have let them grow to flowers for seeds. I enjoy watching the bees and butterflies that come to visit the flowers. Next year I might try harvesting them before they get so big.
