This make 5 gallons of wine. I do grow muscadines in my front yard. I pruned mine last week, and I am pruning 400 feet of them tomorrow for a friend. It is that time of the year.

30 lbs Muscadines
30 pints water
22 1/2 cups sugar or to your preference of alcohol strength
2 ½ teaspoons pectic enzyme
5 teaspoons nutrient
5 campden tablets
1 packet wine yeast

For those of you that live north of the Mason Dixon Line you can use Concord grapes. It will not be the same but after a bottle or two you will not care anyway.

It’s a thick skinned grape. Grows in the hot humid south where northern grapes don’t do well.

You have to suck the juice out and spit out the seed and skin. Very sweet and juicy. Grows wild in many places.

It took a while to figure this picture thing out, but here is a munsadine. It is a Southern wild grape that has a strong flavor. There are several different muscadine vines. They can be used for jellies, jams and juices. I use mine for wine. I like blackberry wine the best, but Yall from the North have heard of and know what a blackberry looks like.

LSJ, I hope to correct you….......we have blackberries grow wild here. When my children were young we would pick pailfuls of blackberries and make them into juice, jams and jellies.

That is fine, that is why I used the munsadine and not the blackberry. I know you have them up there. I am trying to expand your northern food experence. I am giong to post grits next.

Keep expanding. I like your recipes. I am going to make your warning-labeled Jambalaya this week but I won’t be using Ro-tel tomatoes because I can’t find them in this here part of the world. I am hoping it will still be true to your recipe if I use regular tomatoes instead. And I hope you like your t-shirt. : )
