Apple Crumble with pecans

Prepare the crust using my Gingerale Pie crust recipe.

For the filling:
• Peel and core 5 large apples. Then cut into ¾ inch chunks.
• 1 cup of granulated sugar
• Drizzle of honey
• 1/4 cup corn starch
• ½ tsp cinnamon
1. Toss together the apples, sugar, honey, in a large cooking pan.
2. Sprinkle the cornstarch and cinnamon over top, and then stir in.
3. Let it rest for 20 minutes.
4. Bring the mixture to the boil on a medium heat. Cook and stirring constantly until the juices thicken – about 2 minutes
5. Cool to room temperature.
6. Pour into prepared crust.

For the Crumble Topping: 1) Mix together well
• ½ cup margarine or butter
• 1/8 to 1/4 cup of maple flavouring
• ½ cup flour
• ½ cup brown sugar
• Pinch of salt
2) Mix together:
• ½ tsp baking powder,
• ¼ tsp baking soda,
• 1 cup (or more) oatmeal, and
• 1/3 cup of pecan pieces.
3) Place on top of fruit in pie crust.

Preheat oven to 430F.
Place in oven and cover with foil. Bake for 12 minutes.
Reduce heat to 350F and bake for another 40 minutes or until nicely browned.

Serve with a good spoon of vanilla or butterscotch ice cream

Thanks folks. It WAS delicious. I think I would use a little less starch, and thus have reduced the amount above. The advantage of the precooking is that it doesn’t run all over the place and make the bottom soft. I admit it does take much more work, but the taste is worth it.

I tend to use whatever I have available. This time, if I recall, it was my wife’s favourite, honey crisp.
