Pot-roast chicken for 2

There is no real recipe but this is one of my favorite meals when working in the garden as it is very simple and it can cook itself while you work up an appetite. there’s nothing like the smell of pot-roast when you come in on a crisp evening good and hungry from working outside.

In this picture I put the following in a medium roast pan:

1 bone-in skin-on Chicken breast seasoned with seasalt, pepper and garlic granules (optional)
Fresh garden vegetables chunked into approximately 2” cubes/slices:
3 large potatoes
1 medium yellow zucchini
2 stalks celery
1 Onion
3 Carrots
4 baby corn
4 whole cloves of garlic (skin on)

Drizzle with a little olive oil and roast on 400 for 45 mins to 1 hour

I was so hungry when we came inside that I forgot to take a picture of the lovely golden caramelized veggies, but I assure you it was yummy!

Yum, will have to try this one … minus the garlic of course. ;-)
With the weather getting cooler now, I’m much more in the mood for “comfort” food type of cooking.

Boy that sure looks appetizing X.It’s pretty much the same way I make mine.And I love that garlic.I put it in everything I can.I have never heard of leaving the skins on though.What is the reason for keeping them on?

I leave the skins on so they roast inside withought burning then I just squeeze them out afterward.
