This is a great quick and easy soup to ward of the winter woes:
6 cloves of chopped garlic
1 chopped onion
4 stalks of celery chopped
2 large carrots chopped
1/2 red pepper chopped
(I chop it all in a food processor to save time)
1tsp parsley
1 tbs sea salt
1/2 tbp each of pepper, thyme, turmeric, rosemary, cayenne(optional).
Boil above in 6 cups of water and 2cups of chicken or vegetable stock & 1 tbs olive oil.
OR
Boil bone-in skin-on chicken peices in 10 cups of water to make your own stock…Fish them out after an hour simmering and remove the bones & skin, shread the meat and place back into the soup.
Add 2 cups of your favorite noodles and 1 shredded cooked chicken breast (optional if you are veggie, use tofu if you like)
Simmer until noodles & veggies are soft.

Yum … I do love a good hot, steaming bowl of Chicken Noodle soup on a snowy day! Your recipe sounds very similar to mine (except I HAVE to leave out the garlic cuz I am allergic to it – suddenly for the last 15 years now – ... bummer, believe me I know!!!)
