My husband, Joe, keeps up a wonderful vegetable garden every year!

Some squash we have picked the last couple of days….had some steamed last night!!

We somehow….got 2 zucchinni plants in the two rows of straightneck squash…which i am happy about…..it will give our food some color :)

The little purple blossom is one of our pea plants….

The small yellow flowers are tomatoes…

Thought i would throw in one of my favorite squash recipes here:

Scalloped Corn w/Squash Casserole

2 cups summer squash, sliced
1 can creamed corn
1 egg, slightly beaten
1 cup milk
1/2 cup onion, chopped
Cheddar cheese, shredded
1/2 teaspoon salt
1 cup crackers, crushed
1/4 cup butter

1. Put half the squash in a 13×9 baking dish sprayed with cooking spray.

2. Heat corn, milk, onion and cheese.

3. Gradually, add slightly beaten egg and salt.

4. Pour half the heated mixture over the squash and sprinkle with cheese.

5. Sprinkle with half the cracker crumbs and dot with half the butter.

6. Make another layer of squash, corn mixture, cheese, cracker crumbs and butter.

7. Sprinkle with Cheddar cheese.

8. Bake at 375 degrees for 30-40 minutes.

I’ve found a few times that the seeds I bought turn out to be something else(ie: ”We somehow….got 2 zucchinni plants in the two rows of straightneck squash”).

I’m alittle late getting here…..but nonetheless, a big welcome to GardenTenders! The recipe reads like it is delicious. I think I’ll add it to my recipe book….I love squash!

Thank you, Iris, for the welcome! I love it too!! I’ve got squash coming out of my ears right now…we have steamed it, grilled it and made casserole this year!

Oh, I’ve never tried grilled squash. Is there a special recipe?

No….just slice it long ways ..about 1/4 – 1/2 inch thick
We use seasoned pepper, salt and garlic. You can use whatever you like.
Grill on both sides until it starts getting tender.
Then we wrap it in foil (you can add butter if u like)
And it will soften a little more…its really good!
You can do eggplant, zucchini, bell peppers and really any veggie this way.
