Our "Edibles" #14: Amaranth

For the last couple of years I’ve grown flowers called Amaranth and Rick and I both enjoy them. This year I planted “Amaranth” as a grain. The seeds are “multi-hued” and so I have the red and green.

I don’t know if I’ll harvest the seed for eating. I didn’t pick the leaves when they were young so I missed having them in salads.

I don’t think I’ll plant these again as “edibles”. But they are pretty to look at.

The Flower: Amaranth

The Environment:
These are located in full sun, on the east side of our well.
These plants stand about 3’ high. The ones I’ve grown in the past have been as large at 6’.

The colors are just striking … can see why you would enjoy growing them!!

I love the colors

it grows wild here.

It dries extremly well for dried flower arangements. After they are dried Spay them with hair spray or laquer to keep them from falling apart an they will last for years and hold the colors

The deep coloured amaranth is really very attractive. I have tried for several years to get them growing here, but alas they are always choked out with other stuff.

choked out? I think they overpowered my garden last year (or two years ago actually). Last year fallen seeds came up everywhere!

I just love the colour of amaranth.It looks so great mixed in with other colours and plants.
