We have asparagus.. LOTS and LOTS of asparagus!!
I am giving it away and using it for other than “steamed with some butter on top”.

Asparagus Soup

Saute in large pot:
  • 1 large onion, chopped
  • adding some salt, pepper, and turmeric (for the medicinal value)
Asparagus:
  • cut “lots” (1 pound+) into 1/2” pieces and add to onion (I just used whatever amount of asparagus I had)
  • cook/steam for 5 minutes (with lid on)
Add:
  • 5 cups broth (I used chicken broth)
  • cook for 10 minutes, lid on and 10 minutes lid off
Puree:
  • carefully put mixture into blender and puree
  • return to heat and adjust salt/pepper to taste
Cream:
  • add 1 small container of cream
  • heat slowly, and add more broth/water if needed to get the desired thickness of soup

It was delicious, but judging by the colour, I could have used more asparagus. .. probably should have been greener

Recipe #2

Cook some noodles
Saute an onion (and add salt & pepper & turmeric)
Add some chopped, preserved peppers
Add a jar of preserved chicken ( or fresh chicken, of course)
Add some 1” pieces of asparagus, add lid and steam

Put the mixture on top of the cooked noodles
Add grated cheese to top

Debbie: My son who is a chef was at our home and he made Asparagus soup and one little tip the he showed me was cut off the tips and save them so that they are not blended.

Put them back in after you blended the base and the give the tips a final cook as you are heating up the rest of the soup.
