I had an idea for a dessert, checked out some recipes online and then just tossed together some ingredients that I had in the house and … well, the proof is in the pudding.

Crust Layer
I melted some butter and mixed it with a jar of crushed English Chestnuts that I had from the harvest last fall.
I then pressed the mixture into a cast iron frying pan and put it in the oven at 350F to brown.

Pudding Layer
Since I didn’t have any vanilla pudding mix available I cooked up the coconut pie filling mix that I also found in the freezer. I added this to the browned crust layer.

Cool Whip Layer
Because this was my original idea—using the zucchini-pineapple—I made a cool whip layer to add to the top.
I mixed a jar of the “mock pineapple” (zucchini preserved in pineapple juice) with a container of cool whip.

And .. the proof is in the pudding, or Hawaiian .. pie??

Rick had 2 helpings. That would be: “success”.

Sounds fantastic! I love it when you can pull a idea from here or there, search your cupboards, pull out what you have, and make something “new.” When I saw the title of this post, I knew (was hoping) you’d be using your mock pineapple!

it was very yummy for the first and second meals… :)
It would be much better when served with company!
