I had an idea for a dessert, checked out some recipes online and then just tossed together some ingredients that I had in the house and … well, the proof is in the pudding.
I melted some butter and mixed it with a jar of crushed English Chestnuts that I had from the harvest last fall.
I then pressed the mixture into a cast iron frying pan and put it in the oven at 350F to brown.
Since I didn’t have any vanilla pudding mix available I cooked up the coconut pie filling mix that I also found in the freezer. I added this to the browned crust layer.
Cool Whip Layer
Because this was my original idea—using the zucchini-pineapple—I made a cool whip layer to add to the top.
I mixed a jar of the “mock pineapple” (zucchini preserved in pineapple juice) with a container of cool whip.
And .. the proof is in the pudding, or Hawaiian .. pie??
