Not many of my beets came up this year but I guess it was enough. I just let them grow and this morning before my grandson arrived I made some pickled beets.1. cook the beets; let cool and slip the skin off.
2. bring to boil the following
- 5 cups vinegar
- 5 cups sugar
- 1.5 cups water
- 1 tsp pickling salt
3. slice up the beets and put into sterilized jars
4. fill the jars with the boiling liquid
5. add the lids and you are done.
The above liquid does 5 quarts. ... and that is exactly how many beets I had!
but for good measure you can put them in a hot water bath for 10 minutes … and did you know that if you are using the hot water bath for at least 10 minutes then you don’t have to sterilize the jars? Just wash them up good and have them hot, ready for the boiling liquid to be added. Huh!
