Date Crumbles (Gluten-free, Organic, Vegetarian)
2 ½ cups of oats 1 cup oat flour (grind fresh rolled oats in a coffee grinder)¼ cup butter (margarine for vegan)2 tbs brown sugar

For this one, we had a few of the early season jars of apple sauce that didn’t quite work out right and had turned a bit at the top. We’d water bathed them (learned, it’s needed) to break the cycle which was fine, but I figured we’d just pull them, scoop the top and make apple butter out of the rest.

Green Tomato Salsa
5 cups chopped green tomatoes
1 1/2 cups seeded, chopped long green chilies
1/2 cup seeded finely chopped jalapenos
4 cups chopped onions
1 cup bottled lemon juice
6 cloves garlic, finely chopped

Well, I’d been sharing the “winners” with you all on recipes that have been drop dead wonderful, so I thought I’d send over the latest few.
This one is for Red Tomato Relish.. It’s everything I was hoping the green tomato ketchup would have been.

I haven’t tried this yet but it sure did sound yummy. Perhaps for tonight’s supper.
1/2 lb red & candy-striped baby beets1 tbsp olive oil1 tbsp minced shallot1 tbsp red wine vinegar1 tsp grated orange zest1 tbsp virgin olive oil1 tbsp chopped parsley1 tbsp chopped chivessalt & pepper

So what do you do when there are still tomatoes on the vines but frost is coming in fast? Well, you do a mad dash harvest run!
So, now that you have so many green cherry tomatoes, what then? Why, whip up a batch of green cherry tomato pickles!
Was the wifes’ idea to do that… Still got plenty of tomatoes on hand however, so tomorrow I’m going to dig up everything I need to make some green (and some red) tomato ketchup. :)

The is a great quick and easy dessert to use up over-ripe fruit and berries.
Served hot with icecream or even for breakfast with yogurt it is as delicious as it is simple:
In any oven safe pan (pie pan, loaf pan, cake pan) place 4 cups of chopped fruit and berries. If the fruit is dry such as apples, stir in 3 tbs of apple sauce.

Pot-roast chicken for 2
There is no real recipe but this is one of my favorite meals when working in the garden as it is very simple and it can cook itself while you work up an appetite. there’s nothing like the smell of pot-roast when you come in on a crisp evening good and hungry from working outside.
