Every year I try to increase my knowledge and experience in growing nutritious and tasty food for my family. This year, I grew Sunchokes. When I chose them, I was intrigued by several things I had read:

My community church garden plot just gave me these squash. The white one is patty pan and the green and white are ? I cooked the patty pan at 400 for 30 minutes added 2 tbs of butter and peppered to taste. yummy good, better tasting than potatoes…....I was told that it is a heirloom squash dating back 400 yrs so I saved the seeds…Does anyone know what the other green and white squash is?

Jerky Stew
Ingredients:
3 cups water
1 cup dried tomato pieces (about 20 slices)
1 cup jerky pieces (I am using Goose Jerky)
1 cup dried peeled potato slices
1/2 pepper, chopped
1/4 c onion
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1 clove garlic, minced
1 carrot, sliced
Salt and pepper
Combine in large pot and rehydrate for 30 min. Then put on medium heat and bring to boil. Reduce heat and simmer for 30 min. – one hour

I’ve been making a lot of Goose Jerky in the past couple of weeks.
The process that I have been using is:
approximately 4 lbs goose meat
Marinade
1/2 C ketchup
1/4 c soy sauce
1/4 c Worcestershire sauce
1 tsp onion powder
1 tsp garlic powder
1/2 tsp pepper
1/2 tsp liquid hickory smoke
1/2 tsp pickling salt
I marinate the meat for 24 hours (more may be better but I’m not patient enough)

I had a little of the mincemeat left over, after canning, so we did a taste test last night. YUMMY. Rick wasn’t sure about “green tomato” anything but he tried it and he liked it.

I checked to see if anyone has ever posted their recipe for pickled garlic… but it seems this might be the first. It’s a great early august recipe (at least in zones 4-5!)
I just made 6 X 250ml jars of it so I thought I would share. I have friends who go gaga over this stuff. Personally, I love to put it on top of cottage cheese with some toast. Also great on Ryita. It’s amazing. And elegant too if you put it in a brandy glass of some sort for a dinner party.

As you know, this year is really going to focus on dehydrating produce.
Unfortunately, I didn’t look at dehydrating recipes etc before I planted this year’s garden. Around here I am the only one that eats kohlrabi so I only put a couple plants in. Bad move.
