Canning Room #1: Redoing the canning room.

Well, I’ve finally set my mind to redoing the canning room to give.. Well.. More room… We’ve got a storm cellar off on the other side of the basement that’s block construction and a concrete ceiling that is the space under the front porch. It stays nice and cool in there at all times of the year (but not freezing) and is a larger space. July 31/09 I won’t come even close to Scott's produce (wow) but I do think it is important to document quantity so I can adjust it next year. I will be adding to this list as the season progresses. Strawberries- 25 quarts of strawberries dehydrated- 6 quarts, freezer- 12 pints jam Raspberries(so far) - 6 quarts, freezer Blueberries(so far)- 3 quarts, freezer Peas- 1 quart, freezer- lots in my belly! :D Beans(so far)- 3 quarts of dehydrated beans Zucchini(so far)-...

Recipes #3: Chili Sauce

Aug 31, 2008 I just did up a batch of 12 pints of chili sauce. YUMMY. This batch is a little watery because I’ll be adding it to ribs, roasts, and other dishes. This recipe is from my mom’s recipies: 12 quarts tomatoes8 medium onions4 sweet peppers2 handfuls of pickling salt1/2 tsp celery seed2c cider vinegar. Cook til almost thickAdd 8 c brown sugarcook til thickJar.
