Jelly Roll:
1 Jar of crofters premium fruit spread (Raspberry or Strawberry)2 egg yolks4 egg whites¾ cup sifted flour¼ cup + 1/8 cup cane sugar1/8 cup water4 oz whipping cream1 tsp vanillaFruit and chocolate shavings for decoration
Pre-heat oven to 350

Date Crumbles (Gluten-free, Organic, Vegetarian)
2 ½ cups of oats 1 cup oat flour (grind fresh rolled oats in a coffee grinder)¼ cup butter (margarine for vegan)2 tbs brown sugar
Rub together above ingredients until crumb texture. Press 2/3 of the mixture into the bottom of a shallow 6×9 baking pan.
2 lbs of dates1 cup water1 tsp butter (margarine for vegan)

Our Christmas Tree:
I’m sure I could win a prize for the oddest Christmas tree, yet it suits us just fine, is non-toxic and environmentally friendly.
I hate to cut wild trees down for the sake of a few weeks of enjoyment…Just today we went for a hike up a mountain we love to go. And standing on the edge of an old farm field was the remains of what was, just a few days ago a beautiful perfect fir tree that stood alone. My winter garden is finally taking off. I’ve planted collards, cabbages, broccoli. The broccoli has small heads forming, but the cabbage looper worms have attacked all the plants. I spent part of the day yesterday picking off the caterpillars and spraying with BT. Our weather has been unusually warm (up into the 70’s for several days), so the insects haven’t been killed off by the cold. Hopefully the plants will rebound and I’ll still make a good crop. I’ll...
